dulce de leche bars

We beg Autumn to come with these delicious, creamy, oatmeal dulce de leche bars!
A highly requested dessert in my household. Finding a dessert that fills the whole kitchen with its aroma, like the most comforting candle, is an added bonus to this recipe!
This has been a recipe found years ago from High Heels and Grills, but I have made it my own with a few adjustments that came from making these so frequently. The molasses adds a rich depth to these bars.
Salty, sweet, and gooey…time to head to the kitchen :)
dulce de leche bars
ingredients:
1 cup granulated sugar
3/4 cup brown sugar
2 tablespoons molasses
1 cup unsalted butter, softened
2 large eggs
1/3 cup milk
2 teaspoons vanilla
1 1/2 teaspoons salt
1 teaspoon baking soda
2 & 1/2 cups all-purpose flour
3 cups old-fashioned oats
2 (14 oz.) cans Dulce de Leche
instructions:
Preheat oven to 350ºF and grease a 9x13 inch baking pan.
In a large bowl, cream the sugar and softened butter together until light and fluffy.
Add eggs, milk and vanilla. Stir until incorporated. No need to over work your mixture, just stir until everything is blended together.
To the same bowl add flour, salt, baking soda and oats.
Gently whisk together the mound of dry ingredients until combined. Switching to a rubber spatula, begin folding dry ingredients into your wet mixture. Once dough comes together set aside.
Spread half the dough, or as much needed, and press into the bottom of your pan.
Spread the Dulce de Leche over the cookie dough.
Using your hands, gently pat out sections of remaining cookie dough and cover the dulce de leche until most of the top is covered. (It’s okay if some portions are exposed!)
Bake for 25-30 minutes, checking around the 25 minute mark. The bars are done when the top is golden brown.
Let cool completely before serving. Enjoy!!
